Abstract

1,253,644. Fractionating milk fat. M. S. MACCOLLOM. 12 Feb., 1970, No. 6891/70. Heading C5C. Milk fat is fractionated into its component parts by cooling the milk fat from a temperature more than 130‹ F. at the rate of not more than 4‹ F. per hour until a temperature,of 60-68‹ F. is reached to effect crystallization of the high melting fats, or continuing the cooling until 0‹ F. is reached to crystallizing the remaining constituents of the fat and separating the upper layer containing the lowest melting fat crystals from the cooled milk fats, and after the cooling heating the remainder of the cooled milk fat to 72-76‹ F. and separating the high m.p. fat crystals from the remaining milk fat. In the manufacture of butter the further cooling to 0‹ F. is not necessary.
