Abstract
1,249,202. Sausage casing. UNION CARBIDE CANADA Ltd. 10 Feb., 1969 [29 Feb., 1968], No. 7012/69. Heading A2B. [Also in Division B5] A regenerated cellulose sausage casing is impregnated in at least its inner surface with a release agent selected from sucrose, glucose, lactose and maltose, to facilitate removal of the casing after cooking of the sausage. The impregnation of the casing may take place at the same time as the conventional impregnation with glycerine as a softening agent, by immersing the casing in a heated aqueous solution of glycerine and release agent for sufficient time to result in release agent and glycerine contents of 15 to 30% and 18 to 24% by weight of the dry casing respectively. Examples are given of meat emulsions for stuffing the casings, and even those with a high fat content are easily and cleanly stripped after cooking.
