Abstract

[Also in Division B5] Frozen portions of fish or simliar food products are formed by injection moulding a quantity of the food into a mould and applying a freezing treatment to the food while in the mould. The injection moulding apparatus comprises a valve 5 rotatable between the position shown in Fig. 2 and that of Fig. 4 (not shown) in which latter position a cut-away segment 9 is flush with the top face of the mould. As a result, the food, e.g. cod, coley or haddock which has been sliced into sufficiently small pieces to enable it to be pumped, can be forced under pressure into the mould and, upon rotation of the valve the supply is first cut off and, owing to the cut-away segment 9, a space is then created into which the food can expand thus relieving the pressure in the mould. The mould consists of an upper plate 3, Fig. 9, and lower block 4 formed with recesses 1 and venting passages 19. The valve is arranged to feed all the recesses 1 simultaneously. After freezing, the food shapes or fingers are removed from the mould by first heating the lower block with a gas burner, raising the upper plate with the shapes still frozen on its underside, moving the upper plate along rails to a position above a conveyer, and then heating the top face of the upper plate to release the shapes on to the conveyer. The mould parts are then washed during separate conveyance on rails and are then reunited and recycled. A succession of moulds may thus follow each other in sequence in a closed cycle conveying system.
