"Sweet water" solutions containing from 1 to 50% by weight of fermentable sugar are preserved against loss of sugar values due to microbial growth, by admixing therewith from 5 to 50 parts per million of n-heptyl p-hydroxybenzoic acid or an alkali metal or alkaline earth salt thereof.
