Abstract
1,225,452. Grass jelly extract. WONG HON YUNG. 31 Oct., 1969, No. 53427/69. Heading A2B. A method of preparing a grass jelly extract comprises boiling grass in water containing alkali metal (e.g. K) or ammonium carbonate or bicarbonate until a sticky or viscous liquid is obtained, filtering the liquid, boiling the filtrate with stirring until substantially all the free water has been evaporated and then drying the material to obtain a solid grass jelly extract. The solid extract may be ground to a powder. The extract may be mixed with tapioca, rice or vegetable starch (e.g. corn, green bean, sweet potato, lotus root, taro, yam or water chestnut starch) for unsweetened jellies or with sugar for for sweetened jellies.
