Abstract
1,221,125. Crystallizing sugar. J. PFEIFER and A. LANGEN [trading as PFEIFER & LANGEN]. March 18, 1968, No.13016/68. Heading C6B. A suspension for inoculating sugar syrups to promote crystallization during boiling in vacuum pans, comprises a fondant paste of saccharose micro-crystals between 5 and 10 microns in size suspended in a carrier solution. The carrier solution is preferably formed by mixing an aqueous saturated solution of saccharose at room temperature with a similar solution of commercial glucose, preferably in the ratio 60:40. The suspension preferably comprises equal parts by weight of the fondant paste and the carrier solution. The suspension may be made by mixing a saturated saccharose solution and a saturated commercial glucose solution at room temperatures in a ratio of 70:30, thickening the mixture up to a boiling point of 116‹C., cooling to 60‹C. whilst at rest, then further cooling rapidly until vigorous mechanical agitation. An apparatus in which the various stages are controlled automatically is shown in Fig.3 and is described fully in Specification 1, 221,124. Briefly the apparatus comprises a vacuum boiler 1 into which a measured quantity of sugar syrup is passed by emptying the measuring tank 2. When tank 2 is emptied, float switch K2 causes valve 4 to open and admit steam into the boiler 1. When the viscosity of the syrup reaches a predetermined level, viscometer 7 causes valve 10 to open and discharge the inoculation suspension from tank 9 into boiler 1. Heating continues and the viscosity held constant for a period, the viscometer 7 controlling the supply of either hot water or syrup from devices 12 or 13 to achieve this. The viscometer is programmed to then allow the viscosity to rise to a predetermined amount, which completes the cycle.
