Abstract

1,216,688. Making composite confectionery. C. RIJKAART N.V. 6 Dec., 1968 [7 Dec., 1967], No. 58004/68. Heading A2A. A device for mechanically manufacturing bars of almond pastry, marzipan wrapped cake and other composite confectionery comprises a conveyer path, formed e.g. by a conveyer belt 1, on which a flat strip 3 of edible material is carried, together with a number of cores 4 of another edible material around which the strip is to be wrapped, the cores extending longitudinally side-by-side, a number of oblong tapering guide shoes 9-12 with upright longitudinal sides determining passages with initially decreasing widths placed above the conveyer path, and folding members 14a, 14 b, 14c, 15a, 15b, 15c protruding into the passages, wherein driving members are provided in the longitudinal sides of the guide shoes facing the passages for engaging the edible material and assisting the conveyer belt 1 in advancing the material between the guide shoes. The driving members are preferably conveyer belts arranged with their operative runs vertical and arranged in openings in the sides of the guide shoes, while the return runs are juxtaposed adjacent the centre of and within the guide shoes, there being two belts to each of the guide shoes 10, 11 and one belt to each of the guide shoes 9, 12 so that each of the three channels provided between the shoes has two movable walls in addition to a movable floor. The tips 5-8 of the shoes have a sharp front edge, for cutting the strip 3 into three narrow strips, and curved sides for gradually folding up the sides of the three narrow strips, the folded up sides then being engaged by the driving members for assisting the passage of the material as the sides are then engaged successively by the folding members 14, 15. Finally, the overlapping folded portions are engaged by rollers 32a, 32b, 32c to seal them together. For making almond pastry the strip 3 is of puff paste dough and the cores 4 of almond filling, while in the case of marzipan wrapped cake the strip 3 is of marzipan and the cores 4 consist of cake.
