Abstract

1,212,813. Dessert gel. MARINE COLLOIDS Inc. 4 March, 1969, No. 11365/69. Heading A2B. A syneresis-resistant aqueous dessert gel comprises water containing potassium cations and having dissolved therein a mixture of locust bean gum and potassiumsensitive carrageenan in weight ratio of from 1 : 5 to 5 : 1 and calcium sensitive carrageenan in an amount sufficient to inhibit syneresis and not greater than the totail weight of locust bean gum and potassium-sensitive carrageenan. Potassium and calcium salts may also be present. Additional ingredients may include colourings, flavourings, sweetenings, and natural fruit juices. The potassium-sensitive carrageenan may be derived from Chondrus crispus, Gigartina stellata, pistillata, canaliculeta, or chamissoi, or Euchema cottonii, edule, or Okamura. The calcium sensitive carrageenan may be derived from Agardhiella, or Euchema spinsosum, serra, isiformae, muricatum, or uncinatum.
