The consistency of tomato juice prepared by macerating tomatoes in the presence of sufficient added non-toxic acid to provide a pH less than 3, and extracting the juice from the resulting macerate, is increased by adding thereto a non-toxic alkali in amount sufficient to provide a pH above 5, incorporating a minor proportion of raw tomato juice, holding until the consistency increases, heating the product to inactivate enzymes, and acidifying to restore the product to the natural pH of the tomato material.
