Abstract

[Also in Division F4] In preparing a freeze-dried mixture of specified foodstuffs, they are mixed in predetermined proportions, by weight, and as discrete, incoherent particles, without the addition of any substantial amount of water, and the resulting mixture is freezedried for a period of time which is approximately the weighted average, as defined, of the periods of time needed for freeze-drying each of the foodstuffs separately in the same layer thickness and under the same conditions of temperature and pressure. One of the component foodstuffs of the mixture may be partially predried by a gaseous medium and allowed to stand for at least 10 minutes before being subjected to freeze-drying. The mixture subjected to freeze-drying may contain the components in such proportions that the resulting freeze-dried mixture, after being re-hydrated and, if necessary, after being re-heated and cooked, is suitable for direct consumption. At least one of the components may be pre-cooked and/or blanched. The components may be pre-treated so that all the components of the freeze-dried mixture re-hydrate and/or can be completely cooked simultaneously.
