Abstract
1,165,554. Flame peeling. MARELLA Ltd. and ENGINEERING & CHEMICAL SUPPLIES & SERVICES Ltd. 3 May, 1968 [4 Feb., 1967], No. 5502/67. Heading A4C. The skins of fruit and vegetables such as onions are removed by heating the onions or the like preferably to about 500‹C., and increasing the oxygen content of the surrounding atmosphere, preferably to at least 20 vol. per cent., whereby the skin burns off. The process may be conducted in a directly or indirectly heated chamber, and the onions and oxygen may pass therethrough in countercurrent. The heating means may comprise a burner within the chamber, or electrical elements embedded within the walls. The onions may be introduced via a star valve. The treated onions may be sprayed with water and scrubbed. In a typical embodiment, the onions are fed from hopper 1 into tube containing an oxypropane burner 6, propane being fed at 7 and oxygen at 8. After treatment they pass under water sprays 11a, b to a rotating brush washer 14.
