Abstract
1,157,415. Extracting protein. KENNETH CHUNG LUM. 4 April, 1968 [12 April, 1967], No. 16274/68. Heading C3H. [Also in Division C5] A process for preparing a protein concentrate from fish comprises digesting the fish by enzymatic proteolysis to produce a liquid mixture containing emulsified oil and fat constituents, extracting the oil and fat constituents with a solvent and separating the fat-containing solvent to leave a fraction of high protein content free of fat. Preferably the whole fish is first reduced to particle form and the digestion is carried out at 125-145‹ F. by autolysis promoted by enzyme in the fish viscera. The liquid mixture may be screened, before solvent extraction, to remove fish bone and other solids. A suitable solvent is a mixture of hexane and isopropanol.
