A process for producing juice from navel oranges comprises removing the navel from a batch of navel oranges, squeezing the oranges from which the navel has been removed, screening the juice to remove excess fibre and immediately chilling the filtered juice to a temperature of 40‹ F. or below. The juice may be screened through openings 0À025 inch in diameter and chilled below the freezing point. It is stated that the concentration of precursors which on exposure to air and heat are converted into bitter substances, particularly limonin, is reduced by the removal of the navel prior to the squeezing and by the screening to remove excess fibre, and that the precursors remaining are prevented from being converted into the bitter substances by the chilling.
