Abstract
PURPOSE: To obtain juice sacs with high quality of solidity in high yield, by peeling pericarp of citrus fruits, e.g., mandarin orange, etc., treating the whole mandarin orange without dividing it into segments with a chemical so that only outer parts of carpel walls are removed, followed by feeding it to a can.
CONSTITUTION: The pericarp of raw material of mandarin orange is peeled conventionally, the whole mandarin orange which is not divided into segments are treated with an aqueous solution of hydrochloric acid, washed with water, treated with an aqueous solution of caustic soda, and outer parts of the carpel walls are removed to give a material of mandarin orange consisting of juice sacs, juice, and the remaining carpel walls. The prepared material is canned, sterilized by heating, and storaged. If necessary, the material of mandarin orange is taken out, and used as a raw material for collecting juice sacs or a raw material for collecting juice without separating juice sacs.
