Abstract

PURPOSE: Canned citrus juice that is composed of whisker bearing juice sacs which keep the original form with high elasticity and is produced without the formation of broken juice sacs with less man power in the segment-releasing process.
CONSTITUTION: Citrus fruits, as the raw material, are peeled by treating them with hot water by means of a scalder and peeling by hand work or a continuous peeling machine. The peeled fruits, without being divided into each segment, are treated with an aqueous hydrochloric acid, then with an aqueous caustic soda to remove the peripheral surface part of the segment skin and leave fruit pulp 3 (the mass of juice sacs 4) and the center part of segmet skin. The resultant juice sacs are canned to produce the objective canned juice. These juice sacs are more than 1.3 times in weight, less than half in damage rate and more than 1.3 times in strength those produced through conventional processes.
