Abstract

A process for modifying hydrated vegetable phosphatides comprises contacting them with a dilute aqueous acid to provide a mixture of pH 2-5, maintaining the resulting emulsion at an elevated temperature suitably 50-100 DEG C. until it breaks and separating off the phosphatide-containing phase. Suitable hydrated phosphatides are those obtained from soyabean oil, groundnut oil, rapeseed oil and sunflower oil. The acid used is suitably an aliphatic carboxylic acid such as formic-, acetic-, lactic- or citric-acid and is conveniently added as a 10% by weight aqueous solution at room temperature. The phosphatide containing phase can be dried by heating at less than 80 DEG C. under reduced pressure. The acidified phosphatides so produced may be brought to a pH of 6-7 with the aid of weak organic bases such as an ethanolamine, e.g. monoethanolamine before drying. The hydrated phosphatides may be obtained by treating a phosphatide-containing crude oil extract from plant with 0.5-10% by weight of water. The products are suitable as emulsifiers in oil-water systems such as animal feeding stuffs, cooking fats, mayonnaise and mayonnaise like products. Groundnut oil emulsions may also be stabilized by the addition of the modified phosphatides (see Division C1).ALSO:A groundnutoil-water emulsion is prepared by adding a modified plant phosphatide to the oil-water mixture at 50 DEG C and shaking, the phosphatide being one prepared by treating a hydrated plant phosphatide with dilute acid (see Division C2). Other specified emulsions are animal feeding stuffs, cooking fats, mayonnaise and mayonnaise like products.
