Proving - appliances. - In the manufacture o f bread, biscuits, and the like, a prover of the horizontal continuous - surface type is arranged to be operated at different speeds, whereby the period of proof on the prover as a whole, or on its sections or tiers, can be varied, while maintaining constant the speed and position of the feed and discharge, and permitting the speed of co-operating units of the baking plant to remain uniform. Fig. 1 shows a prover which is made in two tiers, each with conveyers 71, 72 which may be driven at different and variable speeds. The upper conveyer 71 receiver the goods from a transverse conveyer 74, and discharges them to a " peeler " 76, such as that described in Specification 111,523, and an inclined plate 77 which conducts them to a counterweighted flap 78. This is operated by a cam 81 and lever 82 so as to discharge the goods to the lower conveyer 72, which delivers them to the feeding-device 84 of the oven. A modification comprises two conveyers, one above the other, driven in the same direction. The upper and lower conveyers deliver the goods to inclined and horizontal plates respectively, whence they are fed manually to the oven.
