Abstract
A method of making a finely-divided substantially odourless and colourless substantially dry food grade casein comprises granulating a water-containing casein curd in the presence of added amounts of water to produce an aqueous slurry of casein containing up to 30% by weight of casein solids, subjecting the slurry to intense forces of impact and hydraulic shear and thereafter subjecting the slurry to high velocity flow whereby a substantially completely homogenized aqueous slurry is produced. The curd may be produced from milk by the action of hydrochloric acid. The shear may be produced by the action of a rotor carrying spaced blades, then passing the slurry between a rotor and a stator at least one of which is serrated, and finally between a smooth-faced rotor and a smooth-faced stator; these zones may be contained within a colloid mill.
