Abstract

A method of retarding the oxidative deterioration of fats oils comprises adding thereto an effective amount of an anti-oxidant and from 0.05 to 1000 p.p.m. o a chelating agent of the formula <FORM:1077458/C4-C5/1> wherein n is 1 or 0; X represents-CH2COOR or -(CH2)mOCOR Y represents-CH2COOH, -CH2COOR or -(CH2)mOCOR wherein R represents alkenyl or alkyl groups up to C22; and m is 1 or 2. The antioxidant may be butylated hydroxytoluene, butylated hydroxyanisole or nordihydroguaiaretic acid, or propyl or lauryl gallate. The method is applicable to butter, margarine, lard, tallow, shortening, castor oil, linseed oil, rapeseed oil, olive oil, corn oil, palm oil, coconut oil, peanut oil, safflower oil or soybean oil.
