Abstract

For separating yeast from the product of a continuous fermentation of wort, the mixture of yeast and fermented liquid is fed into a sedimentation tank tapering to a bottom yeast outlet, the tank incorporating a baffle defining a non-rectilinear (preferably spiral) path for the mixture, the mixture being discharged into the tank below the liquid level therein and the contents of the tank being kept cold so that the warmer inflowing liquid will tend to float on the top. The effluent beer (discharged from just below the top of the baffle) is preferably led downwardly to storage vessels so that it remains carbonated under the resulting pressure head. Preferably the yeast is also led downwardly for pressure head feeding into a filter vessel.ALSO:A mixture of yeast and fermented liquid is fed to the centre of the baffle which, in plan view, is in the form of a spiral, and which occupies part of the cylindrical portion of a tank having a frusto-conical bottom. The upper and lower margins of the baffle are each hollow to form cooling tubes: the two tubes are fed separately with cooling liquid. The tank wall is heat-insulated. Yeast is withdrawn at the bottom of the tank and supernatant liquid from just below the top of the baffle.
