Abstract

A process for the recovery of aroma constituents from aromatic liquids, e.g. fruit juices, comprises breaking up a stream of aromatic aqueous liquid maintained at a temperature sufficient to effect volatilisation of its aromatic constituents with an inert gas, e.g. nitrogen, whereby the aroma is desorbed by the gas, separating the aroma bearing gas from the liquid and contacting this aroma bearing gas with an aroma absorbing aqueous liquid medium maintained at a temperature to cause condensation and absorption of the aroma constituents desorbed by the gas, desorption and absorption being carried out while maintaining the aroma constituents isolated from oxygen by the inert desorbing gas. A suitable apparatus is described.
