Abstract
Fresh fruit flavour is restored to concentrated fruit juices and fruit products such as jams and purees by subjecting the fruit or juice thereof to evaporation at a temperature sufficiently low not to damage the flavour and aroma constituents, passing the vapours so liberated through activated carbon or a similar non-polar adsorbent, removing the flavour &c. constituents from the adsorbent by means of a solvent which is of lower b.pt. than the flavour &c. constituents, has low s.t. and does not form azeotropic mixtures with the flavour &c. constituents, e.g. ethyl ether, pentane or methylene chloride (not ethanol), distilling off such solvent, and adding the residue to the heat-treated fruit juice or fruit product.
