1,027,003. Dispersible food products. MATTHEW WHITE & CO. Ltd. Oct. 17, 1962 [Oct. 19, 1961], No. 37512/61. Headings A2B, A2D and A2E. Food products which are easily dispersible in aqueous liquids such as hot water or milk to make drinks or soups, are prepared by mixing the food material, in a finely-divided state, in the presence of liquid with "commercial glucose", drying the mixture and reducing the dried product to a particulate condition. Individual particles of a finely-divided solid food material or small portions of a pasty, thick-liquid or emulsion food material may serve as a core about which individual particles of the commercial glucose becomes crystallized. The liquid may be derived from the aqueous content of the food material and the commercial glucose may be absorbed partially or wholly into the structure of the food particles. The mixture of food material and commercial glucose may be set to form slabs which are then mechanically reduced to powder or granules. By totally enclosing the particles of the food material mould formation may be inhibited. The term "commercial glucose" covers "liquid glucose", corn syrup, crystal syrup and confectioners' glucose. Food materials specified are (a) finely-divided meat, fish, poultry flesh and turtle flesh, (b) finely-divided wheat, oats, maize, barley, corn, rye and rice, (c) finelydivided peas including marrowfat peas, lentils, beans and butter beans, (d) finelydivided fruit or vegetable solids, and (e) comminuted dehydrated soluble extracts of the previously mentioned food materials, meat extracts, fruit juices or purÚes, and preserved fruits. Examples are directed to the preparation of food products from (1) emulsified bacon or ham and commercial glucose, (2) tomato purÚe and commercial glucose; the product was oven dried to produce an aerated "candy" which was then ground down into a granular state. (3) thick pasty meat extract and commercial glucose, and (4) rolled oats, commercial glucose and methyl ethyl cellulose (aerating and forming agent).
