Abstract

Malting barley or other cereal involves steeping the grain at 22-50 DEG C. for 1-32 hours according to the temperature, preferably with aeration for the whole or part of the period and the temperature being if desired varied during the course of the steep, draining away the steep water and subjecting the grain, preferably in the same vessel to a germination period of 20-72 hours at 12 DEG -30 DEG C., subjecting the grain after germination to anaerobic treatment by displacing the surrounding atmosphere by water or an inert, non-toxic gas such as carbon dioxide or nitrogen or a mixture of water and such gas for a period of 1-48 hours at up to 40 DEG C., restoring an aerobic atmosphere to the grain, and maintaining the grain in this atmosphere for 20-72 hours at 15-40 DEG C. During the steep an air-rest may be provided by draining away the steep water after a first period, holding the grain in air for a second period, and introducing further steep water for a third period, the said three periods totalling not more than 32 hours. The steep water may contain 0.1% of hydrogen peroxide. The steep water may contain 0.05% of formaldehyde. Acidity may be adjusted by lactic acid.
