Abstract

Rapid baking and roasting is achieved in a closed oven chamber 10 by an aircirculating impeller 34 which maximises the transference of heat by air convection from the chamber's heated walls 11, 12, 13, 14 and 15, to goods being cooked on shelves 17, by drawing air through an opening 33 in a baffle plate 19 and pushing it around the edges of this plate, e.g. to create a violently turbulent flow of hot air in the chamber. The opening between the top wall 14 and the baffle plate 19 is smaller than that between the bottom wall 15 and the baffle plate. The oven chamber has a door 16 and is enclosed within a heating chamber 42 having a refractory or insulating lining 41. Baffles 43, 44 prevent hot air from a gas or electric burner 39 reaching the impeller motor 36 and shaft 35. The chamber 42 has an opening 48 and passage 49 to admit air to the burner which has a thermostatic control 53 on the baffle plate 19. Combustion gases escape through an opening 50.
