To make available the nutrients in foods and feeds containing yeast, e.g. Saccharomyces cerevisiae, Torulopsis utilis, the walls of the yeast cells are decomposed by a #-glucanase produced by cultivation of an appropriate micro-organism, eg. a species of Trichoderma, Aspergillus, Actinomycetes, Penicillium, the yeast treatment being at pH 3.0-6.5 at 25-60‹C. for 10-48 hours.
