Abstract

L’invention a trait au domaine de la bioprotection des fruits et légumes crus par application ou mélange d’une composition conservatrice. Plus particulièrement, elle concerne une composition de bioprotection comprenant au moins une souche de Leuconostoc pseudomesentero i des , plus spécifiquement la souche FLOR4G 55 déposée auprès de la CNCM sous le numéro I-5557. L’invention concerne également de nouvelles souches bactériennes de L . pseudomesentero i des, Le u conostoc citreum et Lactobacillus paraplantarum présentant des propriétés d’inhibition de la croissance de la flore altérante des fruits et légumes crus ou sous forme de jus ou de purée, ainsi qu’une méthode de préparation d’une composition de bioprotection et une méthode de sélection de bactéries lactiques capables d’inhiber une flore altérante.
