Abstract
L’invention concerne un procédé de fabrication de fromage lactique caractérisé par une méthode de fabrication inversant les phases d’égouttage avant le moulage, en se basant sur un caillé qui est introduit dans un moule, alors qu’habituellement les procédés habituels partent d’un lait frais, caillé doté d’un extrait sec compris entre 17 et 20% constituant la matière première, et un dispositif particulier de moule, doté d’un réservoir complémentaire pour recevoir du caillé en complément qui est placé au-dessus du moule principal recevant lui-même du caillé, pour obtenir une dimension régulière du produit fini avec un extrait sec variant entre 30 et 35%, une méthode de démoulage simultané de l’ensemble des fromages réalisés, par retournement des parois qui libère l’intégralité des fromages sans déformation, étant mise en œuvre.The invention relates to a process for manufacturing lactic cheese characterized by a manufacturing method reversing the draining phases before molding, based on a curd which is introduced into a mold, whereas usually the usual processes start from a fresh, curdled milk with a dry extract of between 17 and 20% constituting the raw material, and a particular mold device, equipped with an additional reservoir to receive additional curd which is placed above the main mold itself receiving curds, to obtain a regular size of the finished product with a dry extract varying between 30 and 35%, a method of simultaneous unmolding of all the cheeses produced, by inversion of the walls which releases all of the cheeses without deformation, being implemented.
