Abstract

L’invention est relative à un procédé de fabrication de fromage lactique de 1,5 cm de haut pour 3cm de diamètre, dont la fonction est à la fois de produire des fromages de taille régulière tout en facilitant le démoulage, selon un principe de :
- fabrication inversant les phases d’égouttage avant le moulage , alors que normalement le processus est moulage puis égouttage,
- en se basant sur un caillé, alors qu’habituellement on part d’un lait frais, doté d’un extrait sec compris entre 17 et 20% constituant la matière première,
- selon un principe de réservoir complémentaire au caillé contenu dans les moules, aux fins de fournir un approvisionnement complémentaire au caillé au fur et à mesure de l’évacuation de l’eau libre, pour obtenir une dimension régulière du produit fini avec un extrait sec variant entre 30 et 35%,
- et selon un procédé de démoulage simultané de l’ensemble des fromages réalisés, par retournement des parois qui libère l’intégralité des fromages sans qu’ils soient déformés,

Etat des sachant :Relativement à la préparation de produits frais au lait cru caillé selon un procédé lactique, et dès lors qu’il s’agit de fabriquer des fromages de petite dimension (dits aussi portion), il est d’abord utile de rappeler que les préparations de fromages laits crus selon un procédé lactique sont composés de bactéries vivantes, en opposition aux fromages pasteurisés constitués de bactéries mortes. - La seconde méthode connue, en usage dès lors que l’on fabrique ces produits sur de grands volumes, consiste à réaliser des boudins à base de fromages secs ou de report (congelés), qui sont ensuite coupés à l’épaisseur souhaitée. Selon le procédé, les laits utilisés sont obligatoirement pasteurisés en raison des risques bactériologiques dus au procédé de fabrication en vigueur, tandis que ce procédé n’appelle pas un moulage. Selon cette seconde méthode utilisée dans les procédés industriels de façonnage des fromages en boudins à base de fromages secs redécoupés pour réaliser des portions, le caillé lactique utilisé a fait l’objet (préalablement au façonnage) d’une action mécanique pour l’assécher. C oncernant les fromages lai t s crus à base de caillé lactique, il est utile de rappeler que ces produits sont faits de laits caillés, qui avant égouttage sont composés de 90% d’eau, soit 60 à 70 grammes de matières sèches pour un litre de lait. S’il s’agit de respecter le procédé de fabrication traditionnel à partir de lait caillé (en opposition à la constitution d’un boudin à base de produits secs préalablement égouttés), il convient donc de préserver une fabrication traditionnelle consistant à séparer de façon naturelle ( c’est-à-dire non forcée par un procédé mécanique) dans le moule : l’eau de la matière sèche. La raison de cette exigence est de préserver les qualités organoleptiques du fromage, celles-ci s’exprimant du fait que les bactéries s’épanouissent au mieux du fait que l’on n’accélère pas l’égouttage. Dans ces conditions et du fait de la dimension du fromage, la problématique posée est que lorsque que l’on souhaite sauvegarder les méthodes traditionnelles de fabrication, aucun moule ne répond à cette exigence. - un dispositif particulier de moule, doté d’un réservoir complémentaire pour recevoir du caillé en complément qui est placé au-dessus du moule principal recevant lui-même du caillé, pour obtenir une dimension régulière du produit fini avec un extrait sec variant entre 30 et 35%,
