Abstract

Process for making Feta cheese from cowhs milk comprises (a) mixing pasteurised cow's milk, lipase, souring agent and rennet and allowing the milk to curdle; (d) diluting and stirring the curdled milk; (c) draining the majority of the whey from the curds; (d) subjecting the curds to a second treatment to remove further whey; (e) cutting the curds into pieces; (f) pressing the pieces into blocks in a mould; and (g) packing the shaped prod. under brine. Process allows Feta cheese (soft white cheese with a piquant flavour) to be made with cowhs milk in place of the usual sheeps' or goats' milk. The 2-stage draining step facilitates continuous prodn., reduces blockage of the draining gauze and overcomes damage to the curds.
