Abstract

L’invention concerne une installation de brasserie (A) comprenant une cuve de brassage (100), un éjecteur (200), une pompe de circulation (400), et un circuit de circulation (300). L’éjecteur (200) est configuré pour injecter le mélange de brassage dans la cuve de brassage (100), ledit éjecteur (200) comprenant un dispositif d’aspiration (230, 240) et un dispositif de mélange (210). Le dispositif de mélange (210) est destiné à réaliser le mélange de brassage à partir d’un fluide et d’une matière. Le dispositif d’aspiration (230, 240) est connecté d’une part au dispositif de mélange (210) et d’autre part au circuit de circulation (300) et configuré pour aspirer le mélange de brassage hors du dispositif de mélange (210). Le circuit de circulation (300) est apte à contenir le mélange de brassage et configuré pour mettre en connexion fluidique l’éjecteur (200), la cuve de brassage (100) et la pompe de circulation (400).
