Abstract

La présente invention concerne un procédé d’enrichissement d’un aliment en acide(s) aminé(s) isolé(s) et/ou en peptide(s) et/ou en protéine(s) et/ou en complément(s) alimentaire(s), comprenant les étapes suivantes :- Obtention d’une matrice alimentaire perméable aux liquides  ;- Mise en contact de ladite matrice avec une solution d’imprégnation composée d’un liquide, comprenant au moins un acide aminé isolé et/ou peptide et/ou protéine et/ou complément alimentaire, optionnellement additionné d’au moins une plante et/ou épice et/ou arôme;- Imprégnation de ladite matrice avec lesdits acide(s) aminé(s) isolé(s) et/ou peptide(s) et/ou protéine(s) et/ou complément(s) alimentaire(s), en appliquant une sous-pression comprise entre 5 et 20 millibars à la matrice dans sa solution d’imprégnation.
