Abstract

- Procédé de traitement d’un grain de riz et grain de riz traité. - L’invention concerne un procédé de traitement d’un grain de riz paddy ou cargo comprenant les étapes successives suivantes : une étape d’hydratation du grain de riz pour porter sa teneur en humidité à une valeur telle que son amidon puisse être gélatinisé à un taux compris entre 80 et 100% ; une étape de traitement thermique au cours de laquelle on place le grain de riz hydraté dans un autoclave, on injecte un flux de vapeur d’eau sous pression et on maintient le grain de riz sous pression super atmosphérique, à une température prédéfinie comprise entre 120-160°C, pendant un temps de traitement prédéterminé compris entre 10s et 15min, pour gélatiniser l’amidon du grain de riz à un taux compris entre 80 et 100%, et une fois écoulé le temps de traitement, on extrait immédiatement le grain de riz traité de l’autoclave, pour le ramener directement à la pression atmosphérique. - Procédés de traitement de grains de riz, grains de riz traité.
