Procédé de fabrication d'exhausteurs de gout à base d'ingrédients naturels, selon le principe mono-ingrédient, destinés à venir renforcer l'arôme du même ingrédient cuisiné et servi, et sans faire appel à l'ajout d'arômes synthétiques artificiels ; le dit exhausteur de gout devant prendre une forme solide et disposer d'une durée de conservation acceptable à une commercialisation selon la normalisation spécifique à la Date de Durée Minimale ; caractérisé par : - Une première phase de séparation de la chair (a) de l'ingrédient avec les autres parties (b)du même ingrédient présentant des intérêts aromatiques, Une seconde étape d'extraction des arômes selon un traitement différencié des parties séparées, Une troisième étape de séchage et de rassemblement des matières à forte concentration d'arôme issues de la seconde phase du procédé.
