Abstract
Description
L'arganier est un arbre endémique du Maroc et de l'Algérie. Nom scientifique : Argania spinosa, famille des Sapotacées. L'arganier est un arbre aux rameaux épineux û d'où spinosa û de 8 à 10 m de haut, aux feuilles atténuées en un court pétiole, très résistant et qui peut vivre de 150 à 200 ans. Il est parfaitement adapté à l'aridité du sud-ouest marocain et sa silhouette est caractéristique : cime large et ronde, tronc noueux, tortueux et assez court, souvent formé de plusieurs parties entrelacées. Le fruit, I'affiache, est une fausse drupe ovale, fusiforme de 30 mm de long environ, jaune-brun à maturité contenant une noix très dure abritant deux ou trois amendons . C'est de ces amendons qu'est extraite l'huile végétale d'argan, de préférence par pression mécanique à froid pour préserver intactes toutes ses propriétés. L'huile végétale d'argan contient 43% d'acide oléique (Oméga-9), 36% d'acide linoléique (Oméga-6) et le reste étant leur forme mono-glycérique respective.
