Description

The present? invention is in the field of equipment for cheese making and

  its subject is a textile material for a cheese mold

  pressed dough and a particular mold structure using this material.

  It is recalled that the forming by pressing of the fro-

  pressed dough mages is produced either in molds with a wiping element such as a cloth wrapping the curd or a textile covering more or less permanently the internal wall of the mold, or in molds whose wall says

  micro-perforated itself forms the wiping element (but we know the disadvantages

  major advantages of this type of so-called micro-perforated molds).

  The textiles known to form the covering of the

  they are either of the "canvas" type, also called textile with "taffeta" weave, that is to say with simply intertwined threads, or else knitwear (cf.: the publications of FR-82/20800 and FR-85/25016); among the fabrics with taffeta weave used in the composition of the wiping elements, we will distinguish those with monofilament yarns or horsehair which provide fabrics, called lattices, fairly rigid (cf.: FR-1339247 ("ROTTERDAM"), and those with multifilament threads which provide flexible fabrics as used in the covering

  FR-2510867 and FR-2662727) themselves which can be subdivided into multi-

  continuous filaments or discontinuous multi-filaments.

  mages require threads of synthetic origin to be able to offer sufficient solidity

  health so that their wear does not make their cost prohibitive.

  However, it has been noted by the Applicant that, while natural fibers (cotton, linen), probably due to their character

  hygroscopic, hardly adhere to the curd during pressing, the synthetic fibers

  ticks have a much higher adhesion (propensity to "sticking"), and the higher the greater the number of filaments making up the son; so

  a taffeta fabric made of polypropylene monofilament yarns has a medium adhesion

  nimal, while a canvas of threads of the same chemical nature and the same size

  parent, but multi-filament, has much higher adhesion.

  However, the problem of the choice of textile is complicated

  only because of the requirements, sometimes opposite, which are imposed on the one hand on the manufacturer

  dressing and secondly to the cheese maker.

  The manufacturer of the covering will look for a canvas

  magpie which on the one hand will authorize an easy confection, which will easily marry the cons

  turns of the various organs of the mold and which will lend itself to easy folding in on itself during demolding operations. These fabrics are therefore made of fine horsehair (FR- 1 339 247) or of multi-filament yarns (see on this subject the publications FR-2 762 752, FR-2 754

976, FR-2 654 302).

  The cheese manufacturer may require a crusting as-

  sez marked therefore resulting from the use of fairly wide and spaced enough wire fabrics.

  We see that the requirements can be many

  and contradictory and the difficulty was to find or design a textile for

  cheese mold spin which, at the same time, 1 "- is made up of synthetic threads, to give solidity, and that these synthetic threads are monofilament threads, to avoid adhesion,

  2 - has spacings between the wires, or or

  vertices, large enough to obtain a sufficient marking of the cheese rind, but sufficient draining "covered" space to be able to ensure the drainage of the curd and, 3 - either flexible enough to be usable in molds with almost permanent coating in which skin will be subjected to

  folding / unfolding operations.

  In what follows we will call "openings" the spaces

  these free of textile material; in a taffeta weave these spaces are roughly car-

  res and dimension on the side generally between 0.1mm and 2mm; and we learn

  will cover the space occupied by the textile material separating two neighboring openings (FIGS. 1 of FR-82/20 800 and 1 to 4 of FR-2 622 767 represent

taffeta armor).

  According to the present invention, a synthetic textile material intended to form an element for wiping the cheese curd (curd), is characterized in its generality in that it is formed, in at least

  one of the two directions "warp" or "weft" by a "cover" formed of bands

  intersecting, the said strips defining between them "openings", and being provided with drainage means, that is to say means allowing the passage of liquid through the strip, the said covering strips having a thickness e at least two times smaller than their width 1: it should be understood that the synthetic material, for example polyethylene, polypropylene, polyamide or polyester, constituting the strips is in itself non-draining, or that the strip devoid of its drainage means is itself waterproof. It follows from this arrangement that with a "covering" surface identical to that which would be provided by a textile made of large hairs, one obtains with the flattened draining strip which replaces the cylindrical horsehair, a much thinner therefore much more flexible textile. It remains to define what the

  drainage means with which the strip is provided.

  According to a first embodiment, not actual-

  under a perforating wheel, or at the focal point of an inter-

mittent at high frequency.

  perforation of the wall of a micro-perforated mold, by a second wall, internal, mid

cross-perforated and flexible.

  According to a second preferred embodiment,

  filament (horsehair) arranged side by side and constituting each said strip, which can therefore be called "sheet" of son; this is an infrequent weaving method

  but nevertheless known and technically accessible.

  Advantageously, said single-filament son (horsehair) arranged side by side and constituting said band are three in number, the width

  The present invention will be better understood and

  details will be apparent from the description which will be made, as well as from

  my particular embodiments, in relation to the figures of the attached plates, in which: FIGS. 1 and 2 are respectively schematic and perspective illustrations of a taffeta with monofilament threads, from the prior art FIG. 3 is an illustration similar to fig.1 of a first embodiment of a material of the invention, fig.4 is an illustration similar to fig.3 of a second, preferred form of a material of the invention, FIG. 4a is a photograph to scale, of an embodiment of the material of the preceding figure, FIG. 5 is a perspective illustration of a cheese mold comprising a covering belonging to the invention,

  In fig.1 and 2, a textile material of the prior art known as a wiper element for the curd, is of the taffeta type, that is to say with simple interlacing of the threads; if the wires are substantially cylindrical bristles 1 and if d is their diameter, the thickness E of the material will be substantially 2.d, an "opening" 5, imposed by use, is left free between adjacent bristles; The overall opening of the material is therefore generally equal to that of its surface. To fix the ideas, a reasonable opening of lmm requires hair with a diameter of

  1 mm; the rigidity of such a fabric is excessive in order to constitute coverings for

  medium format (10 to 50 cm in diameter or side).

  In fig.3, the textile of the invention applied as a wiping element for the curd, is made up of interlaced (woven) strips comprising two longitudinal rows of perforations such as 7; if the width e of the bands is given a value equal to the imposed opening 4, the overall opening of / 4 of the preceding textile will have been respected, if e1 = d / 3 is the thickness of the bands the overall thickness of the material will be E1 = 2.el = 2 d / 3, the overall thickness E1 will be

  equal to 1/3 of the thickness E of the previous material, we can design without having to apply

  that bending calculations, which we will have, at equal aperture, increased considerably

  the flexibility of the material. In addition, thanks to the small thickness (3 / 10ths of a mm), it is possible to make the above-mentioned perforations and give the canvas an effect of

  drainage that cannot be obtained from a material of fig. 1.

  However, in the current state of the art, there is a certain difficulty in carrying out the perforations and, in any event, such a perforated material is not commercially available; so we had the idea of replacing the

  perforations 7 by the interstices formed between two adjacent hairs, or juxtaposed.

  Thus a strip such as one of the strips 3 and 6 of fig.4, equivalent to the strip of fig.3 in its flexibility (E2 = El), its opening and its ability to drainage, consists of a sheet 3 of three juxtaposed horsehair with a diameter of 3 / 10th, horsehair whose interstices 6 constitute a drainage means substantially equivalent to

  perforations 7 of the material of fig. 3.

  The same rules would apply to sheets of two or four bristles, to a weave of the "serge" type understood by a person skilled in the art of weaving, to larger or smaller openings, or to diameters

substantially different hair.

  In fig.5 a square mold 10 consists of a "funnel" 11 dressed with a wiping element ("windscreen" 14), and a square mold body 12 dressed with a wiping element (pocket 15.). The pocket is fixed almost permanently to the upper edge of the mold by an elastic belt 25 in which it is embedded (in known manner: see for example EP 72 309 and FR2 762 752). In fig. 6, the pocket 15 is constituted by a single cruciform piece formed by a square central part 21 surrounded by four lateral parts such as 26, hot folding around fold lines such as 27, allows good positioning. the pocket, as it is, that is to say without seams, in the mold body; thus we observe in fig. 5 that two adjacent edges such

  that 20 are not interconnected; this characteristic arrangement is completely fa-

  vorable for optimal flexibility of the pocket and easy use of the mold.

  In fig. 7, the windscreen is formed by a piece

  single cruciform 14 formed by a square central part 22 surrounded by four parts

  lateral ties such as 28 roughly trapezoidal in shape; 360 fold lines, such as 29 allow after turning and sewing a hem to pass strips 17 (fig.5) connected together by an elastic band 18 allowing attachment

  removable from the windscreen on the tray (lower part) of the container.

  We observe on the magnified views of the medallions 31

  and 32, on the one hand that the material constituting the pocket and the windscreen is,

  nière advantageous, of the type of that of fig.4, and on the other hand that: for the pocket the cutting is carried out in the "bias" of the textile (inclination of the layers of hairs at 45 relative to an edge 21a of the square central part 21), and that for the windscreen the cutting is carried out in the

  "straight grain" of the textile (layers of horsehair parallel to an edge 22a of the central part car-

row 22).

  It should however be noted that the above-described packaging

  could also be made with other materials, for example with a classic textile

  that monofilament such as the type of that of fig. 1 and 2, because the structure of the ha-

  Billage lends itself well to rigid textiles.

  Likewise, the textile material of the invention is suitable for

  would it be perfectly good for making dressings such as those of EP-72 309 for circular molds of fairly large diameter (for example 40 cm and more), and would thus avoid, in cases where one is looking for openings important, the recourse

  to more expensive complex structures such as that of FR-2,762,752.

Claims (2)

  1.- Textile material made of synthetic material intended to form a wiping element for the cheese curd (curd), characterized: in that it is formed in at least one of the two   "warp" or "weft" direction by a "cover" formed of bands (2,3)   crossing, said bands defining between them "openings" (4), and being   provided with drainage means (6,7), that is to say means allowing the passage-   wise liquid through the strip, said cover strips having a thickness e at least twice less than their width !: (e ≤ 1) 2.- Material according to claim 1, characterized:   in that the said means of drainage are   killed by the interstices (6) between monofilament son (horsehair) arranged side by side in sheet (3) and constituting each said strip; (Fig. 4) 3.Material according to claim 2, characterized: in that said single-filament son (horsehair) arranged side by side and constituting said band are three in number, the width of a band I being at least three times its thickness e2; 4.- Material according to claim 3, characterized: in that the said monofilament son (hair) have a diameter of the order of 3 / 10ths of a mm, the width of the covering strip therefore being 9 / 10th of mm; 5.- Material according to claim 4, characterized:   in that the strips are woven in an ripe taffeta; and   in that the openings are squares whose length   on the side is substantially equal to the width of a strip, that is to say about   ron 1 mm; (fig.3) 6.- Material according to claim 1, characterized:   in that the said means of drainage are per-   holes (7) passing through said strips (2); (fig.3) 7.- Dressing of a cheese mold with a quadrangular shape using a   material according to any one of the preceding claims, of the type of   mold with almost permanent covering comprising a covering, called "windscreen", of "foncet" (11) and a covering, called "pocket", of the mold body (12), characterized: in that the pocket (15) and the windscreen (14) each consist of a single piece with a cruciform cutout, of said material, (fig. 6,7) 8.- Cheese pan covering according to claim 7, characterized:   in that the pocket constituted by a part to be   cruciform cut includes a quadrangular central part (21) intended to constitute, or to be applied against, the bottom of the mold and four lateral parts (26) identical in shape also quadrangular intended to be applied against the internal lateral faces of the latter , the opposite edges (20) of said lateral parts, adjoining the central part, being intended, after folding to 90, to be joined two to   two, when the bag is placed inside the mold, without being connected together   ble other than by the central part and by a holding means (25) of the po-   che located at the upper edge of the mold; 9.- cheese mold cover according to claim 7, characterized: in that the cup (15) is constituted by a cruciform cut piece comprising a central quadrangular part (22) intended to constitute, or to be applied against, the underside of the tray of the fonet and four identical side parts (28) of trapezoidal shapes intended   to be folded down and kept folded down by elastic means (18).   10.- cheese mold cover according to claims 8 and 9, characterized:   in that for the pocket the cutting is carried out in the "bias" of the textile (inclination of the layers of horsehair at 45 relative to an edge 21a of the square central part 21), and that for the windscreen the cutting is carried out in the "straight grain" of the textile (layers of hair parallel to an edge 22a of the central part square 22).
