Description

 The subject of the present invention is a poking probe intended to measure the freezing temperature of quarters of meat and in particular to check the actual state of freezing at the heart of said quarter of meat.

 Puncture probes of this type are in themselves well known and widely used.

 The problem is to check and follow the evolution of the state of freezing at the heart of a quarter of meat with a view to its cold storage and to ensure that all the qualitative conditions for good are fulfilled. This is achieved by a temperature probe stuck in the neighborhood.

 At the end of freezing, it is very difficult, if not impossible, to remove the probe, with a certain risk of deterioration of the latter.

 The object of the invention is to remedy this drawback.

 According to the invention, a probe for this purpose is proposed for this purpose intended to measure the freezing temperature of quarters of meat and in particular to check the actual state of freezing at the heart of said quarter of meat, characterized in that it is provided with a rapid and high reheating device along the part stuck in the quarter of meat.

 Thanks to this means, a small part of the frozen part is brought to a temperature close to 0 ° C., which allows the extraction of the probe without deterioration and without damage to the meat.

 This system brings very many advantages, namely, without limitation - greater longevity of the sensor, - more pulling of the cable, - more destruction of the plunging part, - improvement of the measurement conditions.

 The invention will be better understood using the description given below of an embodiment given by way of nonlimiting example with reference to the single appended figure which is a side elevation view of a probe according to the invention.

 The generally referenced probe (1) essentially comprises, in a manner known per se, a grip handle (2), a tapered part (3), a sensitive element including the input (4) and output (5) wires. ) are shown at their exit from a flexible stainless steel protective sheath (6).

 The sensitive element may be of several types and therefore the present definitions are not limiting (thermocouple, element PT 100 CTN, etc ...).

 Thanks to this rapid heating device, the part of the probe pierced in the meat is brought to around 300 ° C., which temporarily heats the part directly in contact with the quarter of meat and allows rapid and easy extraction of the probe.

 The heating element can be supplied for example with a voltage of 12 volts for an intensity of 3.8 amperes. The heating element is of course only activated at the very end of freezing and for a very short time.
