L'industrie de production de purées, nectars, cocktails ou solutions liquides de fruits, de légumes ou de mélanges de fruits et legumes destines à l'alimentation humaine a recherche depuis de nombreuses années à associer aux techniques mécaniques classiques d'extraction ou de préparation, l'action de réactions enzymatiques destinees principalement à solubiliser les pectines et donc à valoriser la partie des fruits et légumes que les procedés classiques d'extraction laissaient sous forme de déchets. L'intérêt est en fait double : économique d'une part puisque le volume des déchets est réduit, nutritif d'autre part en raison de a valeur pour ltalimentation humaine de ces mêmes déchets.PROCESS FOR THE PREPARATION OF PUREES AND COCKTAILS OF FRUIT TiECTARS
