Корнеплоды сахарной свеклы поступают в моечную машину для удаления грязи с ее поверхности. Промытые корнеплоды инспектируют на ленточных транспортерах, удаляя при этом некондиционные корнеплоды и плохо промытые с наличием тех или иных дефектов, а также посторонние примеси. Затем корнеплоды обрабатывают острым паром при давлении 0,8-0,9 МПа в течение 60-90 с в паротермическом агрегате. Быстрая обработка острым паром позволяет легко отделить кожицу от мякоти. Дальнейшая тепловая обработка нецелесообразна в связи с тем, что увеличивается глубина провара подкожного слоя, что в свою очередь приводит к увеличению содержания редуцирующих веществ (РВ), увеличению количества отходов и потерь ценного продукта. Далее сахарную свеклу подвергают инспекции, резке на ломтики толщиной 0,8-2,0 мм, очищенную и нарезанную ломтиками сахарную свеклу обрабатывают раствором лимонной кислоты до рН 4,0-4,5. Использование подкисленной воды необходимо для предотвращения инициации потемнения ломтиков сахарной свеклы за счет инактивации фермента полифенолоксидазы.
