Abstract

For use in the mfr. of patisserie prods., this covers a multi-cavity mould plate for open-top pastry tart bases. The top rims of the cavities have cutting edges in which a flat sheet of pastry is laid. A mating, multi-die punch descends to cut and push a blank of pastry into each plate cavity. In this addn., each die is made of thermally conductive material and has an adequate heat capacity to ensure homogeneous cooking of the pastry. Heat distribution is substantially even over the whole of the surface of the moulded pastry base, within the concave surface as well as on the surface adjacent the cavity wall. The prod. is baked evenly throughout which produces a partic. satisfactory texture. Much more moisture is eliminated from the pastry which retains its freshness longer and gives an extended shelf-life to the prod.
