Abstract

L'invention concerne des perfectionnements aux produits de charcuterie. L'invention concerne plus particulièrement un produit alimentaire de charcuterie constitué de viande hâchée, broyée ou émincée, et enfermée dans une gaine tubulaire en forme de boyau, tels qu'un saucisson, une saucisse, un saucisson à cuire, ou analogues, et le produit est caractérisé en ce qu'il comporte une bande d'écorce d'épicéa insérée lors de la préparation du produit, entre la paroi interne du boyau et la masse de chair contenue dans ledit boyau. Application à une saucisse ou saucisson à cuire d'un parfum original.
