Abstract
Encasing materials for foods comprise films permeable to aqueous or oily liquids and impregnated uniformly with solutions in such liquids of colouring materials and of flavouring materials receptive by the film-contacting surface of food encased in the films. The films referred to are natural sheep gut casings, sausage casings made from hide fleshings which have been swollen and then hardened, films of regenerated cellulose or of regenerated cellulose containing unmodified cotton linters, vegetable parchment paper. Casings of regenerated cellulose may be plasticized by glycerol, sorbitol, mannitol or the like, in conjunction with urea, if desired. Orange, red, yellow and blue food dyes are specified, and the natural colourings alkanet, annatto, carotene, cochineal, chlorophyll, saffron and turmeric are referred to. The flavourings, which may be in the form of water solutions or emulsions, tinctures, or oils, are exemplified by smoke flavour and pyroligneous acid, garlic, onion, mint sauce and Worcestershire sauce flavours, monosodium glutamate, and lemon, orange, lime and peppermint flavours. According to one example, a seamless tube of regenerated cellulose prepared according to Specification 213,931, [Class 2 (ii)], is, while still wet, conducted through a bath of aqueous glycerine in which is dissolved a dye and the flavouring, the tube is dried and stuffed with a wiener sausage mix, and the stuffed tube is linked, cooked, chilled, and skinned. According to another example, regenerated cellulose sausage casings impregnated with tartrazine and an alcoholic solution of lemon oil are filled with sugar water, vanilla ice-cream mix, and melted hard candy respectively, the fillings are frozen, and the casings are then stripped from the products. According to another example, a regenerated cellulose casing is impregnated with an orange dye and a smoke flavour, and is filled with melted white processed cheese.
