Abstract

L'invention décrit des laits congelés, lactosérums déminéralisés et délactosés entre 50 % et 90 %, aliments pour porcs et poulets, délactosés utilisant aspergillis niger à la température ambiante. Pour les aliments de bétail, c'est pendant le transport, le stockage ou concentration que la delactosation se fait, des quantités de 1 à 2 o/oo de l'enzyme sont utilisées jusqu'à épuisement. Par ultrafiltration on obtient jusqu'à 85 % des protéines. Utilisation aussi dans les glaces.
