Abstract

L'invention concerne une nouvelle glucoamylase neutre. La glucoamylase de l'invention, dont l'optimum de pH se situe entre environ 6,0 et 6,5, et élaborée par une souche du champignon Stachybotrys subsimplex. La glucoamylase de l'invention, appliquée à la saccharification d'un hydrolysat d'amidon dans les conditions optimales, donne des rendements élevés en dextrose.
