Abstract

On forme des fibres protéinées élastiques et caoutchouteuses par injection d'une masse micellaire protéinée à travers un tamis ou une filière, dans de l'eau chaude ou un autre milieu fluide ayant un pH d'environ 5,5 à 7,5 et une température supérieure à environ 90 degrés C. On n'utilise pas dans la formation de ces fibres des valeurs extrêmes en acidité ou en basicité Les fibres protéinées ont des caractéristiques qui les rendent utilisables comme produits de remplacement de la viande (de tous types) dans divers produits homologues alimentaires.
