Abstract
The soln. is frozen and spread into a layer of 0.1-3 mm thickness. This layer is broken up into flakes which are then processed through a number of repetitive cycles of prod. compression followed by decompression. In each cycle the pressures exerted on the prod. during the compression and decompression stages are equal to or greater than the corresp. pressures of the preceding cycle. As a result, the process delivers an enriched aq. soln. or concentrate and pure, compressed ice. The repetitive, processing cycles are pref. carried out in a multi-stage screw press. Each stage of the screw press rotor has a length of helical scroll followed by a length of plain shaft where decompression follows compression by the scroll. The characteristics of each length of helical scroll are selected to provide the desired compression. Used in prodn. of concentrates of fruit juice, beer, wines, blood plasma, whey, enzyme extracts, herb extracts etc. Process allows the quality-retaining characteristics of freeze concn. to be applied to prods. where high viscosity at low temp. had impeded crystal growth. The installation is simple, robust and inexpensive. The time taken to produce the concentrate is greatly reduce compared with earlier processes e.g. down to about 10%.
