Abstract

Obtention de protéines alimentaires d'origine végétale, et détoxification des substances toxiques et non protéiques associées. On traite d'abord la matière végétale à pH alcalin par l'eau oxygénée pour préparer une solution de protéines, qui est ensuite acidifiée jusqu'à pH de 6 à 8,5. On obtient une solution clarifiée de proteines à laquelle on ajoute de la catalase puis un anti-oxydant. On récupère enfin les protéines de la manière usuelle.
