Abstract
L'invention concerne un procédé pour la préparation des légumes avant leur mise en conserve. Il est caractérisé par le fait qu'après l'équeutage le légume est transporté dans une enceinte contenant une solution diluée à température ambiante d'un hydroxyde d'un métal alcalin ou alcalino-terreux; que cette enceinte est mise en dépression pendant une durée maximale de l'ordre de 30 minutes, selon la nature du légume; que cette immersion est suivie d'un lavage à l'eau, puis de l'opération classique de blanchiment, et de cuisson ; que le légume cuit est lavé à nouveau à l'eau pour éliminer les traces éventuelles de la solution d'immersion et, qu'enfin on ajoute au légume ainsi cuit et lors de la mise en boîte un jutage comprenant du chlorure de sodium et de l'acide citrique et qu'on stérilise. Application à la conserve des champignons.
