Abstract

On ajoute à la boisson du carbonate de calcium qui, en réagissant avec l'acide, forme du tartrate de calcium avec dégagement d'anhydride gazeux, tartrate à partir duquel se forment des cristaux qui sont séparés de la boisson, une cristallisation plus active étant en outre favorisée par l'addition de germes cristallins propres à fixer les cristaux de tartrate. Les germes cristallins sont ajoutés à la boisson en tant que cristaux de contact ou << catalyseurs >> sous forme de poudre et dans une proportion d'au moins 2g environ par litre de boisson, pratiquement en même temps que le carbonate de calcium, le tartrate formé se fixant sur les cristaux catalyseurs et étant ensuite extrait avec ceux-ci.
