Abstract

Procédé d'extraction des protéines du lait qui consiste à extraire d'abord les protéines, autres que la caséine, par mise en contact du lait écrémé avec au moins une résine échangeuse d'anions et de la silice, fixation des protéines puis élution, puis à séparer la caséine restée en solution du lactose et des sels minéraux. Mise en oeuvre du procédé dans les industries laitières pour la préparation de protéines utilisables dans les industries alimentaire, diététique, pharmaceutique et vétérinaire.
